Pumpkin Spiced Latte Ice Cream

Smooth, creamy and a little spicy, this Pumpkin Spiced Latte Ice Cream is just like your favorite drink only colder.

  • In a small saucepan heat the milk until warm then add in the brown sugar. Stir to dissolve.
  • If you are using the candied ginger, make sure to chop it into small pieces.
  • In a large bowl add the warm milk mixture and all the other ingredients. Stir to combine.
  • Chill the ice cream mixture for 30 minutes before freezing.
  • Pour the ice cream mixture into the frozen bowl of an ice cream machine and freeze according to directions.
  • Transfer the ice cream to an airtight freezer container.

Notes

Candied ginger is also called crystallized ginger, and is sugar-coated. If it doesn't not come pre-chopped, place the pieces of ginger on a cutting board and chop with a chef's knife.  Sprinkling a little sugar over the ginger makes it easier to chop and not be so sticky.
