I love using cast iron for cooking—especially for burgers. The skillet gives them a great sear and that delicious crust. Plus, cooking them in their own juices keeps the patties juicy and flavorful, unlike the dried-out grilled version I tend to make. The skillet version is so much better.

So this post is all about how to cook a hamburger in a skillet. This also means you can have a great hamburger without a grill!

I can’t tell you how many times I have made both of these recipes, they have become my go-to dinners.

Hamburger Ingredients

Ingredients

  • Ground Beef—I use one pound of 80/20 ground chuck for flavor and moisture. An 85/15 blend works, too. An 85/12 blend also works well.
  • SeasoningsGarlic Powder, kosher salt and ground black pepper.
  • Cheese – I’m a fan of melty cheese on a burger and prefer cheddar cheese, but add what you like, or go cheeseless.
  • Buns – Use a soft, sturdy, and flavorful bun.
  • Olive oil for the pan, or use vegetable oil.
  • Condiments – Add your favs. 

Optional Ad-Ins

  • Add a teaspoon of Worcestershire sauce if you like.
  • You can also add onion powder if you don’t like raw onions on the burger.

Before cooking the burgers, ensure your cast iron pan is properly cleaned and seasoned to get the best-tasting skillet burgers. This guide on how to season a cast iron skillet shows you the steps to season your skillet perfectly.

How To Cook Burgers In A Skillet

Grab your cast iron, turn on the fan (things might get a little smoky), and let’s fry up some burgers the easy way—no charcoal required.

Step 1. Add the hamburger and the seasonings to a large bowl and gently mix to combine.

Step 2. Divide the hamburger mixture into four equal portions and place on a tray while your skillet heats up.

Step 3. Heat a 10-inch cast iron skillet over medium to medium-high heat for two minutes, then add the olive oil. You can also use a large skillet of your choice.

Step 4. Add the patties to the hot skillet and cook for about 4 minutes for medium-rare, or 5 minutes for medium. Flip the burgers, top with the slices of cheese (if using), and cook for an additional 4 minutes. The cooking time can vary depending on how you like your burgers.

Cooking Tip – To cook a medium burger, the internal temperature of the meat should reach between 140°F and 145°F. This will result in a juicy burger with a light-pink center and a slightly firmer interior texture.

Step 5. Place the cheeseburgers on the buns and top with your favorite toppings.

Keep That Skillet Hot—Let’s Make Dessert

Once the burgers are done, I highly recommend moving straight to dessert. It’s the natural order of things, right?

Keep cooked hamburgers in an airtight container in the refrigerator for up to three days.

How to reheat a cooked hamburger

You can reheat the burger in the oven, wrapped in foil, for about 10 minutes at 350°F. Or place it on a plate and microwave at 50% power for 30 seconds to 1 minute, depending on the size and thickness of the hamburger.

Note: Reheated hamburgers may not taste as good or have the same texture as freshly cooked ones, but this method will help you enjoy a warm and tasty burger.

Can hamburgers be cooked in a regular skillet?

Yes, ensure you use a high-quality frying pan for the best results since the burgers need to cook at high temperatures.

  • Leaf lettuce

Instructions
 

  • In a large mixing bowl, gently mix the ground beef, salt, pepper and garlic salt.
  • Divide the dough into four 4-ounce patties. Make them a bit bigger than the hamburger buns because the burgers will shrink when cooked.
  • Heat the skillet over medium heat to medium-high heat for about two minutes. Add the olive oil.
  • Add the patties, and cook for about 4 minutes for medium-rare and 5 minutes for medium. Flip the burgers, top with cheese slices if using and cook for another 4 minutes.

  • If you like, toast the burger buns.
  • Top the bottom bun with the hamburger or cheeseburger, pickles slices, tomato slice, and lettuce then add the top bun.

    Ground beef should always be cooked WELL unless you processed the meat yourself. This recipe is a great way to get food poisoning

  3. Being a good ole southern girl, I have always used a cast iron pan which was handed down from my Mother. There is no other way! Besides garlic salt, I add some worcestershire sauce. Awesome!

    I absolutely love these pan fried burgers.There’s something about the cast iron that just cooks them. so we’ll. juicy on the inside and a nice, slightly crisp exterior. And LOVE the addition of garlic salt to the patty mixture. These were a hot all around at my house!

    I am usually one to cook my burgers on the grill, but it has been too cold to think about standing outside cooking!!!
    So I tried them in a skillet. I wasn’t sure they would get as much flavor, but I was wrong. I think it must have been the cast iron! It It was really easy to cook them in the skillet and they tasted great plus all the kids loved them. I used two cast iron pans as there is 7 of us. One for those who like cheese and 3 burgers in the pan for those who don’t have cheese (well one puts his cheese on at the table as he likes a slice of brie on his and he doesn’t like it to melt too much)
    Overall definitely a successful dinner and one I’ll make again when I don’t want to grill.
