At my house, simplicity rules during the week, and this flatbread pizza is one of my favorite recipes for an easy weeknight dinner. It's also a great recipe to make when I need a party appetizer.
You will love the combination of barbecue sauce, tender chicken, Colby jack cheese, and red onions, and the best part is that it takes minutes to make. It's so quick and easy that your kids could make it for an after-school snack or pizza night. Even the hubby can handle it when he's glued to the game. Trust me, if my hubby can make these, yours can too!

Chicken Flatbread Pizza Ingredients
- Flatbread: Grab a store-bought flatbread crust easily found in the grocery store's bread aisle. Naan bread or pita bread can also do the trick.
- Chicken: You can opt for rotisserie chicken or swiftly cook and shred boneless chicken breasts. If you make this roast chicken, you should have plenty of leftovers.
- BBQ Sauce: Use your favorite BBQ sauce or whip up a homemade BBQ sauce.
- Colby Jack Cheese: My go-to for cheesy goodness, but mozzarella cheese, Monterey Jack, or gouda cheese are tasty alternatives.
- Red Onion: Red onions' vibrant hue and flavor make them a favorite topping.
How To Make Chicken Flatbread Pizza
Step 1: Heat oven: Heat the oven to 375 degrees.
Step 2: Prep chicken: If you have leftover chicken, shred it or cut it into small pieces. You can also cook a chicken breast and shred it when it's cooled.
Step 3: The flatbread base: Place the flatbread on a baking sheet and spread the barbeque sauce over it.
Step 4: Add the cheese: Cover the flatbread with shredded cheese.

- 1 large flatbread
- 1 cup barbecue sauce
- 1½ cups colby jack cheese shredded
- 1½ cups cooked chicken chopped, or shredded
- ½ cup red onion sliced
Instructions
Flatbread
- Preheat oven to 375℉.
- Lay out your flatbread on a baking sheet and pour the barbecue sauce all over the bread. Spread evenly with a spoon or rubber spatula to the edge of the flatbread.
- Then evenly spread the chopped chicken on top of the cheese. Lastly, place red onion slices throughout the pizza.
- Place the baking pan in the oven for 15 to 20 minutes or until the cheese has melted and edges of the flatbread are crispy.
- Remove from the oven, cut and enjoy immediately.
- Store any leftover slices of the flatbread in a sealed container in the refrigerator.
