These Lucky Charm marshmallow bars are so yummy! They have creamy white chocolate mixed with crunchy, sweetened cereal bits. Each bite gives you a nice crunch. We always go for the squares with our favorite marshmallows; mine is the rainbow!

Can we talk about marshmallows?

You need a bag of good old-fashioned marshmallows to make these gooey treats, but seriously, if you eat Lucky Charms cereal, you know the box is full of all kinds of marshmallows in fun shapes.

Did you know there are eight different colorful Lucky Charms marshmallows called Marbits? Which is your favorite: shooting stars, clovers, hearts, moons, unicorns, rainbows, horseshoes, or red balloons? For me, it’s got to be the rainbow!

So that you know, you can buy just the Lucky Charms marshmallows. I have done this to add to other desserts, and it just doesn’t hurt to have some extra marshmallows to snack on.

Lucky Charms Cereal Bars Ingredients

  • 1 Box of General Mills Lucky Charms Cereal, or you can use another brand; just look in the cereal aisle
  • Marshmallows – use mini or regular marshmallows – they both melt the same and come in 10-ounce bags.
  • Butter
  • White chocolate or almond bark – I prefer using white chocolate for a better taste.

How to make Lucky Charm Bars

Step 1. Line the baking pan with parchment paper and spray with cooking spray. Make sure the paper extends over the sides of the pan so you can easily pull the bars out.

Step 2. This is optional, but I like adding marshmallows to the bars once they are in the pan to show off their shapes and colors. So, remove about ¼ cup of marshmallows from the cereal.

Step 3. Add the butter to a large pot and melt it over medium heat on the stovetop. Once the butter is melted, add the marshmallows and constantly stir until melted and smooth. Remove the pan from the heat.

Step 4. Pour the cereal mixture into the gooey marshmallows and stir well until fully incorporated.

Step 5. Pour mixture into the prepared 9×13 pan. Spread the mixture into an even layer using a greased spoon or spatula. Scatter the remaining marshmallows you pulled out from the cereal and gently press them into the top of the bars so they stick to them.

When working with melted marshmallows or marshmallow cream, spray your spoon or spatula with cooking spray to keep the marshmallow from sticking.

Step 6. Let the bars cool down and set (about 30 minutes to an hour.) Pull the bars out of the pan by lifting up the parchment paper. Place the whole sheet of bars on a cutting board, turn it upside down, remove the parchment paper, then turn it back over and cut the bars into even pieces.

Step 7. Add the white chocolate to a medium-sized bowl and melt in the microwave at 30-second increments, stirring between every 30-second increment. Continue until fully melted.

Tips

  • Be sure not to overheat the white chocolate as it can seize. Melting in short bursts and stirring often ensures a smooth consistency.
  • If you want the marshmallows within the bars to be more pronounced, don’t mix them in until the cereal has partially cooled. This way, they maintain their shape and texture.
  • For an extra touch of festivity, consider topping the white chocolate with themed sprinkles or edible glitter before it sets.
  • A pizza cutter can make slicing the bars into neat, even pieces easier than a knife.
  • If the mixture is sticky when spreading in the pan, lightly greasing your hands can help you press down the mixture without it sticking to you.

  • Let the bars cool down and set (about 30 minutes to an hour.) Pull bars out of the pan by lifting up the parchment paper, then cut the bars into even pieces.
  • If using a white chocolate bar, break the bar up into smaller pieces. Do the same if you are using almond bark, this will help the chocolate melt more evenly. Add the chocolate to a medium-sized microwavable bowl.
  • Melt the chocolate in 30 second increments in the microwave, stirring between every 30 second increment. Continue until fully melted.
    Dip the bottoms of the bars into the chocolate, making sure to come up the sides of the bars just a bit so you can see it from the sides of the bars, then sit the bars on a sheet of wax paper to harden.
  • Store the bars in an airtight container for up to five days. Or freeze for later.

How to freeze Lucky Charms treats
These Lucky Charms bars freeze well.
If you want to freeze them individually, you can either wrap them tightly in plastic wrap and foil,  or place the bars back in the pan and cover them tightly with plastic wrap and foil. You can freeze the bars for up to 3 months.  Let them sit at room temperature for 15 minutes before serving.
