Yes, I love making cakes from scratch, but this cake tastes totally homemade and there is no need to tell people otherwise. But here’s the deal. This cake is made with a boxed lemon cake mix, a box of lemon pudding, and Mountain Dew. Yes, adding soda pop to a cake does some amazing things.

What I love about boxed cake mixes is how easy they are to work with. They’re a staple in the kitchen for a reason – super versatile and simple. Plus, you can snag them at a great deal. And the best part? With a few extra ingredients, you can turn them into a yummy treat in no time. It’s a boxed cake mix hack!

I am a big fan of making cakes from scratch, but now and then there is a recipe like this that tastes just like a scratch cake.

This moist cake has a delicate texture and an amazing lemon flavor. I am a big, big fan. So, let’s use that boxed cake mix!

  • Lemon Cake Mix – Any brand will work, and you can also use a yellow cake mix. There is nothing like the rush of artificial cake flavor.
  • Lemon pudding – use the instant type. This will make your cake extra lemony, moist, and tender.
  • Mountain Dew – this replaces the water you would normally add to a cake mix and adds citrus flavor. Yes, a can of soda!
  • Eggs – the four eggs will add richness and structure to this cake, plus a deep rich color.
  • Oil – canola oil is best because it has a neutral flavor and will make this cake extra moist.
  • Powdered sugar – You can sprinkle this on top of the baked cake or make a creamy icing.

How to Make Mountain Dew Bundt Cake

Step 1. Heat the oven to 350 degrees F. and oil your bundt pan. Take a paper towel and wipe the oil all over the pan, including the cone.

Step 2. Pour the cake mix, instant pudding mix, oil and eggs into a large mixing bowl, or the bowl of a stand mixer.

Step 3. Mix these ingredients with the hand mixer on medium-low speed to incorporate them.

Step 4. Add half of the Mountain Dew and mix on low just to get it mixed in, then add the rest of the soda. Mix the cake batter on medium speed for about two minutes until it becomes smooth and thick. Scrape the bowl as needed.

Step 5. Pour the cake batter into the prepared bundt pan.

Step 6. Bake the cake for 45 minutes, until the cake is set and a toothpick comes out clean. Let the cake cool in the pan for 10 minutes then invert onto a cooling rack or a cake plate.

Step 7. Make the icing by mixing the powdered sugar with Mountain Dew until it is thick and still pourable.

Step 8. You can either pour the icing on top of the cake or use a knife to spread it on top. Once the icing is set, slice and enjoy.

Step 9. Store the cake in an airtight container or loosely cover it with plastic wrap.

Leaving a cake to completely cool in the bundt pan will more than likely result in the cake being stuck in the pan. It’s best to let the cake cool for 10-15 minutes, then invert it onto a cooling rack to finish cooling.

  • Cake Batter
  • Heat the oven to 350° F. Oil the bundt pan thoroughly including the center cone.
  • In a large bowl, or the bowl of a stand mixer, add the cake mix, pudding mix, eggs, and oil.
  • With an electric mixer, or the stand mixer, beat on medium-low speed to break up the eggs.
  • Add half of the Mountain Dew to the bowl and mix on low speed for 30 seconds just to get it mixed in then add the rest of the soda and mix on medium speed for about two minutes. Scrape the bowl as needed.
  • Pout the batter into the prepared bundt pan and bake for 45 minutes, until cake is set and a toothpick comes out clean.
  • Let the cake cool in the pan for 10 minutes then flip it out on a cooling rack or a cake plate. Continue to cool before icing the cake.

Making the icing

  • In a small bowl mix the powdered sugar with 1/4 cup of the soda. Stir until smooth and creamy. You can this icing to be very thick, but still pourable.
  • If it is easier, transfer the icing to a large measuring cup then slowly pour it onto the top of the cake. Or, you can spread the icing on the cake with a knife. You will probably not use all the icing, it just depends on how much you want the cake covered.
  • Let the icing firm up before slicing.

Storage

  • Store the cake in an airtight container, or cover it loosely with plastic wrap for up to three days.

Notes

I baked this cake in a gas oven with a 12-cup bundt and a 12-cup bundt pan.
 I used a 20-ounce bottle of Mountain Dew and did have some leftover.

Bundt pan tips

  • If you are using a heavy aluminized non-stick bundt pan prepare it by oiling. I find using a really good quality bundt pan releases the cake intact.
  • If you are using an older bundt pan that is thin and has scratches make sure you thoroughly grease with solid vegetable shortening and then flour the pan.  
If you prefer, skip the icing and sift powdered sugar over the top of the cake.

    Tried this Mountain Dew Cake and was glad it had so much lemon flavor. I wasn’t sure about using a can of soda in a cake mix but it does work. Plus I love the lemon flavor with creamy icing drizzling on the sides.:) Just perfect!
