I am a bit obsessed with these ice cream balls and have found them perfect for parties, afternoon snacks and a sweet little dessert. It's hard to resist an Oreo topped with a mini scoop of ice cream covered in chocolate and, of course, colorful sprinkles.

- Ice Cream - Pick your favorite flavor.
- Oreo Cookies - Mix and match flavors; nowadays, they have cookies with different fillings, so match the cookie up with your ice cream.
- Dark Chocolate - Use the best you can get.
- Coconut Oil - This will give you that hard chocolate coating.
- Toppings - Have fun with your toppings; use sprinkles, coconut, crushed Oreos, or graham cracker crumbs. Use your imagination here.
These babies gotta go in the freezer, so make some room for them. The first time I made these, I didn't think ahead and had no room in the freezer, so I had to put the ice cream bites on top of a bag of frozen corn and a pizza box. It worked, but a tray would have been a much better idea.
Tools you need
- To make the little scoops nice and neat, use a small ice cream scoop with a flat bottom; mine is a one-tablespoon scoop.
- Use a bench scraper or a wide flat knife to flatten out the ice cream and pack it down in the scoop, making it nice and smooth on the bottom.
- This small metal tray fits in the freezer easily and is perfect for freezing ice cream bites.
How To Make Chocolate Covered Ice Cream Balls: Step by Step
How to make the ice cream bites
- Choose your ice cream flavor or mix and match flavors.
- Choose your Oreo cookie - I am using the Chocolate Oreos, but the Golden Oreos also work well.
- Make room in your freezer for the ice cream bites. I set a tray in the freezer before I scoop the ice cream, which keeps everything cold.
- Make a nice clean scoop of the ice cream using a small cookie scoop, ensuring the bottom is smooth. Using a bench scraper or knife, scrape the excess ice cream off the scoop so the bottom of the ice cream ball will be flat, and put ice cream on top of the cookie.
- Place the cookie with the ice cream scoop in the freezer on the tray and freeze until firm- I scoop six cookies at a time, then set them on the tray in the freezer, then scoop some more. Freeze until firm, at least one hour.
How to make a chocolate shell
Everyone asks how I get that hard shell chocolate topping. It's like the Hershey's Magic Shell, and you can definitely use that, but because I think I have to make everything from scratch, I'm going to give you my super-secret recipe for the chocolate coating.
The chocolate coating is made with dark chocolate and coconut oil. Coconut oil is what makes the chocolate hard. Just melt the chocolate and coconut oil together in the microwave, stir well, and you will have a chocolate coating. It really is like magic.
How to dip the ice cream in the chocolate
Dip the cookie with the frozen ice cream into the melted chocolate by holding it and turning it upside down. Dip the ice cream ball and the top layer of the cookie into the chocolate.
The ice cream ball is frozen to the cookie so it will not fall off. But if, by chance, the ice cream gets a little melty, pop it back into the freezer.
Chocolate Tip
You will have chocolate left over, so you can dip more ice cream balls or dip some strawberries in it. You can also pour the melted chocolate into ice cube trays and freeze it for other uses.
Add a topping
Once the cookie is dipped in the chocolate, sprinkle it with all your favorite toppings.
Set the ice cream bites back in the freezer for 1-2 hours, then serve.
I am a big fan of colorful sprinkles, but you can add other toppings too!

I usually plan for two or three bites per person and I guarantee these won't last long. Have fun and be creative. There are countless combinations, and all will be yummy.

Chocolate Covered Ice Cream Bites
Ingredients
- 12 Oreo cookies chocolate or golden flavors
- 1 quart Ice Cream you can use different flavors
- 12 ounces Dark Chocolate chopped
- ¼ cup coconut oil
- toppings of your choice - nuts, crushed cookies, sprinkles, graham cracker crumbs
Instructions
Scooping the Ice Cream Bites
- For this recipe, I am using 12 Oreo cookies. You can use as many Oreos as you want; make sure to have enough ice cream on hand, and enough melted chocolate.
- Have a tray ready in the freezer to put the ice cream bites on.
- Using a 1 tablespoon ice cream scoop, make a big scoop of ice cream and then scrape off the excess with a bench scraper or a flat knife, making sure the ice cream is packed in the scoop. You want the bottom to be flat so it sits on the Oreo.
- Place the scoop of ice cream on an Oreo. I usually do six at a time then place these on the tray in the freezer. Then repeat with the rest of the Oreos.
- Freeze the ice cream bites until firm.
Chocolate Coating
- Place the coconut oil and chopped chocolate in a small bowl and heat in the microwave at 20-second intervals, until the chocolate is melted. Stir until the chocolate coating is smooth, then let cool.
Dipping the Ice Cream Bites in Chocolate
- Make sure the chocolate coating is in a deep enough bowl to dip the ice cream bites.
- Dip the ice cream bite into the chocolate coating, making sure to coat the ice cream ball and the top part of the Oreo. This seals the ice cream and Oreo together. Let the excess drip back into the bowl.
- Immediately after you dip the ice cream ball in the chocolate, sprinkle it with your choice of toppings. I have found it best to sprinkle on the topping instead of dipping the ice cream bite in the topping.
- Place the ice cream bites back in the freezer, and freeze until firm, at least one hour.
- Store the bites in a freezer container for up to three months.
