What are Sugar Wafer Cookies

These sweet little cookies were invented in the 1800s in New York and later the recipe was sold to Nabisco.

In the U.S. the Keebler elves apparently make these wafers, but you can find many other brands like Loacker Wafer Cookies, Vortman Wafer Cookies, or Ruger.

These cookies have a thin, crispy, airy wafer layer with a creamy filling. They are kind of light as air when eating and perfect for a light crispy treat.

These wafer cookies are rather nostalgic and were very popular in the early to mid-1900s as a special treat, and soon popped up in school lunchboxes across the U.S.

You can find many different flavors and different fillings these days, such as vanilla, chocolate, and strawberry.

Want to make your own? Sorry, there is no replicating these delicious wafer cookies, but they are perfect for using in recipes or decorating.

How to make sugar wafer cookies: Step-by-step

Dip and decorate

Step 1. Prepare a baking sheet with parchment paper to lay the dipped cookies on.

Step 2. Add the white chocolate chips and the coconut oil to a small mixing bowl and mix to combine.

Step 3. Place the bowl in the microwave for 30 seconds, then stir well. Place the bowl back in the microwave for 15-second intervals until the chocolate is completely melted and smooth.

Step 4. Put all your toppings in small bowls and set them on a baking sheet to be ready to use. I like to use the baking sheet to catch any sprinkles and toppings that fly away.

Step 5. Holding the sugar wafer over the bowl of the melted chocolate, spoon the chocolate over half of the cookie on all sides, and let the excess drip off, then place the cookie on the parchment-lined or wax paper-lined baking sheet. If your bowl is deep enough, you can also dip the cookie into the chocolate.

Step 6. While the chocolate is still soft, sprinkle on the topping. It may be helpful to hold the cookie over the bowl of sprinkles or colored sugar so it doesn’t get all over the other cookies. You can easily place other toppings on the cookie.

Note: Dipping a few cookies and decorating them a few at a time is best. If you dip all the cookies first, the chocolate may harden, and the topping will not stick.

Step 7. Let the cookies sit on the baking sheet until the chocolate has set and hardened.  That’s it! Fun and easy, right?

Ingredients I use

Make sure to have plenty of the Vanilla Sugar Wafers on hand and I like using Ghirardelli White Chocolate for melting and dipping cookies and candies. For decorating the cookies, this Wilton Holiday Mix of colored sugar and sprinkles is an easy way to get some fun toppings.

  • Try using dark chocolate instead of white chocolate for chocolate-dipped sugar wafers.
  • There are several flavors of wafer cookies, like strawberry, chocolate, orange creme, lemon, and more.

White Chocolate Dipped Christmas Sugar Wafer Cookies

These cute as can be no-bake sugar wafer cookies are dipped in white chocolate and decorated in your favorite Christmas sprinkles and topping. These dipped sugar wafer cookies are fun cookies to make with kids, young and old.

  • Unwrap the sugar cookie wafers and place them on a plate
  • Line a baking pan with parchment paper or wax paper.
  • Place each topping in bowls.
  • In a small bowl add the white chocolate chips and the coconut oil and mix together. Microwave for 30 seconds. Stir. Then continue microwaving in 15-second intervals until the chocolate is melted and smooth.
  • Holding a wafer in one hand over the bowl of white chocolate, use the other hand to spoon the white chocolate on all sides of the wafer starting about ½ way down the cookie. Allow the excess icing to drip off the cookie then place on the parchment paper.
  • Decorate as you wish. For the M & M's, just place the candies on top of the cookies. For the colored sugar and sprinkles, if you want to get the sides decorated, pick the cookie up and hold it over the bowl and sprinkle the topping on the top and sides of the cookies, then place it back on the parchment paper.
    Repeat as many wafer cookies as you wish.
  • Allow the cookies to sit at room temperature until dry and the chocolate is hardened or you may place them in the refrigerator to speed up the process.
  • Store the cookies in an airtight container for several days.

Notes

You can get very creative with all the toppings and of course vary this recipe for different holidays, birthdays, sports events, and parties.

    These cookies are the perfect colors for Christmas and I thought they would be simple to make. For me it was a total disaster. My chocolate didn’t melt correctly but crisis diverted by adding a bit of milk. The next step of spooning or dipping did not go as planned. Finally just as I expected the cookies were excessively sweet. I was really looking forward to adding these to my Christmas cookie plate but this one is just not for me.
