Unwrap the sugar cookie wafers and place on a plate
Line a baking pan with parchment paper or wax paper
In a small bowl add the white chocolate chips and the coconut oil and mix together. Microwave for 30 seconds. Stir. Then continue microwaving in 15-second intervals until the chocolate is melted and smooth.
Holding a wafer in one hand over the bowl of white chocolate, use the other hand to spoon the white chocolate on all sides of the wafer starting about ½ way down the cookie. Once all sides are lightly coated with the chocolate, place on the parchment paper and decorate as you wish. Repeat as many wafer cookies as you wish.
Allow the cookies to sit at room temperature until dry and the chocolate is hardened or you may place them in the refrigerator to speed up the process.
Store the cookies in an airtight container for several days.
You can get very creative with all the toppings and of course vary this recipe for different holidays, birthdays, sports events, and parties.
There are other flavors of sugar wafers so you can vary the colors and tastes.
