This simple to make Wedge Caesar Salad recipe is topped with bacon and parmesan cheese that is crispy and crunchy. Make this salad for lunch or a side salad to serve at dinner.

Instructions
Heat a medium-sized skillet over medium heat. Stack several slices of bacon together and slice longwise, then slice across to make a small dice. Fry the diced bacon slices until crisp. Make sure to stir the bacon so it cooks evenly.Drain the cooked bacon on paper towels and let cool. You can also fry the bacon in strips in the skillet and then crumble it after it has cooled.
Prepare the lettuce by removing the outer leaves. These leaves are usually very thin and may look wilted. Cut the head of lettuce in half down through the core, and then cut in half again to make 4 wedges. Cut the ends of each wedge to remove the stem.
Place the lettuce wedges on individual plates or a platter. Drizzle the salad dressing over each wedge, enough so it starts to drip down the sides of the wedge.
Sprinkle the bacon crumbles, and shredded cheese over the salad dressing, then sprinkle with the black pepper.
Serve the lettuce wedges cold.

How to wash the lettuce wedges?Once the wedges are cut, leave the core intact. Rinse each wedge under a light stream of cold water. Lightly shake the wedges then place them on paper towels and pat dry.About the bacon
The amount you use depends on what you like.
It is best to use regular sliced bacon - not the thick-sliced as it will crumble better.
You want the bacon in small pieces so it sticks to the salad dressing and stays on top of the lettuce wedge.
You can also use bacon bits for a vegetarian option.
