Chicken Salad With Grapes

Ingredients

  • 4 cups rotisserie chicken
  • ¾ cups red grapes halved
  • ¾ cup celery diced
  • 2 Tbsp shallot diced
  • ½ cup mayonnaise
  • 3 Tbsp fresh dill minced
  • 2 Tbsp lemon juice
  • Salt and pepper to taste

Instructions

  • Cut rotisserie chicken, grapes, and celery into tiny bite-size pieces and set aside.
  • Mince the shallot and the fresh dill and set aside.
  • In a large bowl, combine chicken, grapes, celery, shallot and dill. Mix to combine.
  • Fold in mayo and lemon juice. Taste and add in any salt and pepper necessary. Mix again and enjoy!

Storage

  • Once made, store this chicken salad in a sealed container in the refrigerator for up to three days.

Notes

This salad can be eaten right away, but letting it sit for a couple of hours or overnight improves the flavor.
