Crock Pot Ham and Potato Soup
Prepare all the vegetables. Using a cutting board, and a chef's knife. Cube the potatoes into bite-sized pieces, no need to peel the potatoes. Chop the carrots and celery, and dice the onion.
Using the cutting board, cut the ham into bite-size pieces.
Add the ham, potatoes, onion, carrot, celery, chicken broth, dried parsley, salt and pepper to your slow cooker. Stir the soup ingredients together and then cook on low for 7-8 hours, or on high for 4-5 hours.
In a small bowl, mix the flour, half and half and sour cream until smooth. Add this mixture to the cooked soup and stir to incorporate.
Using a potato masher, mash the soup several times to break down some of the vegetables. This will help thicken the soup.
Set the temperature to high, cover the crockpot and cook another 15 to 20 minutes.
Ladle into soup bowls and enjoy!
