Turkey and Stuffing Roll-Ups with Cranberries

Try this easy to make Turkey and Stuffing Casserole that tastes just like a big turkey dinner but it is so much easy to make. Include your favorite vegetable when baking this casserole and add some mashed potatoes on the side for a complete meal.

Turkey Rolls

  • 8 slices Deli turkey sliced thick - this is usually 1 pound
  • 1 cup cranberry sauce homemade or store-bought
  • 2-3 cups Prepared stuffing homemade (see recipe below) or store-bought
  • 3 cups Prepared turkey/chicken gravy homemade (see recipe below) or store-bought

Roasted Carrots

  • 2 cups sliced carrots ¼" slices
  • 1 tbls olive oil
  • salt and pepper to taste

Homemade Stuffing

  • 9 slices bread mulit-grain or white,
  • 3 tbls butter
  • cup onions,diced
  • ½ cup celery, diced
  • ¾ cup chicken stock can use turkey stock
  • 1 tsp fresh sage can use dried sage
  • 1 ½ tbls fresh parsley can use dried parsley
  • 1 tsp. kosher salt
  • pepper to taste

Homemade Gravy


  • How To Make Stuffed Turkey Rolls

Preheat the oven to 350° F. Use a 13" x 9" glass baking dish, spray the bottom with cooking spray or coat with olive oil

  • Lay a slice of turkey on a plate and spread with a teaspoon of cranberry sauce
  • Add ¼ cup of the stuffing at the bottom of the turkey slice then roll up tightly and place the roll in the baking dish, seam side down
  • Continue with the remaining turkey slices
  • If you have leftover stuffing add that to a corner of the baking pan


  • Peel and slice the carrots in ¼" thick slices, toss with olive oil and salt and pepper. Add the carrots to the baking dish.

Baking and Serving

  • Cover the baking dish with foil and bake for 30, remove from the oven and take the foil off and stir the carrots and check for tenderness. Place the baking dish back in the oven for another 10 minutes to brown the turkey rolls and carrots.
  • Serve the turkey rolls and carrots with mashed potatoes, the extra stuffing, gravy and cranberry sauce.
