These gingerbread Rice Krispie treats are my go-to for holiday gift-giving or when I need a festive snack without making a mess in the kitchen. I will admit it, I still love these treats in any flavor.

You can whip these up right on the stovetop, and trust me, it’s so easy. If you have kids, let them help.

Gingerbread Rice Krispie Ingredients

Salted Butter: Helps the Rice Krispie treats taste less sweet and more balanced. If you don’t use salted butter, I recommend putting a pinch of salt in when you put the spices.  

Mini Marshmallows: Due to their smaller size, mini marshmallows melt more evenly and quickly, ensuring a smoother, more consistent mixture that coats the cereal uniformly and helps achieve the perfect gooey texture.

Molasses: Gives the treats their signature gingerbread flavor and a deeper sweetness.

Ground Ginger, Cloves, and Cinnamon: Create the warm, spicy gingerbread flavor that defines these treats.

Vanilla Extract – Enhances the overall flavor and adds depth.

Rice Krispie Cereal: Provides the crunchy texture and base for the treats.

Spiced White Chocolate Drizzle: Compliments the gingerbread flavor of the Rice Krispie treats and adds a festive topping.

How To Make Gingerbread Rice Krispie Treats

Step 1. Melt the butter in a large pot over medium heat. Add the marshmallows, molasses, ginger, cloves, and cinnamon and stir continuously until completely melted. Add the vanilla extract and stir until combined.

Step 2. Remove from heat and add the Rice Krispie Cereal, gently folding until nicely combined. Pour into the prepared baking dish. Lightly butter your fingers and press lightly to flatten and even out the mixture. Let it come to room temperature before continuing.

Step 3. Combine the white chocolate chips, butter, cinnamon, and ginger in a heat-proof bowl and set over a double boiler. Use a rubber spatula to stir until the chocolate is melted.

Step 4. Drizzle over the Rice Krispie Treats, sprinkle festive sprinkles on top (if desired), and let set up before cutting into squares to serve.  Don’t they look amazing.

Rice Krispie Treat FAQ’s

Can I microwave my white chocolate chips instead of using a double boiler? 

Yes, but white chocolate is less forgiving than normal chocolate. If you do, I would melt at 50% in 10 second increments. If you are able, I’d recommend double boiling.

Can I use full-size marshmallows instead of mini marshmallows? 

Yes, you can. They take a lot longer to melt, though, so I may recommend turning your heat down to medium low to prevent the marshmallows from burning before they’re fully melted.

  • ½ cup salted butter
  • 16 oz mini marshmallows
  • ¼ cup molasses

  • 1/8 teaspoon cloves

  • Spray a 9×13 baking dish or line with parchment paper and set aside.
  • In a large pot melt the butter over medium heat. Add the marshmallows, molasses, ginger, cloves, and cinnamon and stir continuously till completely melted. Add the vanilla extract and stir till combined. Remove from heat and add the rice Krispie Cereal and gently fold till nicely combined.
