Who says you need fancy equipment or a sink full of dishes to handle a chocolate craving? Not me. This chocolate mug cake is my go-to when I want a quick dessert for one, without making a whole production out of it.

No mixer, no cake pan, just a mug and a fork.

This cake is made with simple pantry staples, stirred right in the mug, and cooked in the microwave in about a minute. You’ll get a soft chocolate cake with melty chocolate bits, and a dessert that’s ready fast.

Microwave tip: mug cakes can overcook quickly because microwaves vary a lot. Start with 50 seconds, then add time in 10-second bursts until the top looks set and the center is no longer shiny. Let it sit for 2 minutes to finish cooking.

I love this cake because it’s the perfect portion for one. You get a chocolate fix without a whole cake hanging around.

Mug Cake Basics

  • A mug cake is a single-serving cake mixed right in a microwave-safe mug and cooked in the microwave.
  • It’s a quick way to get a warm homemade dessert without baking a full cake.

Ingredients

  • Butter: Adds flavor and helps keep the cake moist. Melt it first for easy mixing.
  • All-purpose flour: Gives the cake its soft, sturdy texture.

  • Cocoa powder: Use unsweetened cocoa powder for a deep chocolate flavor.
  • Dark chocolate chips: Melt into gooey pockets of chocolate. (I always use the good stuff like Guittard or Ghirardelli!)
  • Baking powder: Helps the cake rise.
  • Large egg: Binds everything together and keeps the cake tender.
  • Water: Adds moisture. You can swap in milk to make the cake even richer.
  • Vanilla extract: Rounds out the chocolate flavor. Make homemade vanilla or buy good-quality vanilla.

How To Make A Chocolate Mug Cake

Get ready, because this is going to be fast!

Step 1. Put the butter in your mug and microwave until melted, about 20-40 seconds. (Some microwaves melt it fast, so keep an eye on it.)

Tip – I melt the butter first while I grab the other ingredients.

Step 2. Add the remaining ingredients and mix with a fork until no dry flour or cocoa remains. Make sure the egg is well mixed, with no streaks of egg white. If you want, whisk the egg in a small bowl first, then stir it into the batter.

Step 3. Microwave for 50 seconds and check it. Keep cooking in 10-second bursts until the top looks set and the center is no longer shiny or wet-looking. Overcooking happens fast, so stop as soon as it’s set.

Step 4: Let it stand for 2 minutes before eating. Then dig in.

What To Pair This Mug Cake With

This mug cake is great on its own, but toppings make it extra fun. Try whipped cream, a scoop of vanilla ice cream, or a handfull of fresh berries.

Can I store leftovers?

Since this is a single-serving recipe, there usually aren’t leftovers! If you have extra, cover the mug and eat it within a few hours, as it dries out quickly.

Can I use a different sweetener?

Yes. Brown sugar or coconut sugar can replace granulated sugar, but the flavor and texture will be a little different.

What size mug works best?

Use a microwave-safe mug that holds at least 10–12 ounces. Smaller mugs cook the batter thicker, which can lead to longer cook times and a drier cake.

Why did my cake turn out dry?

It was cooked too long, plain and simple. Microwave wattage varies, so start at 50 seconds, then cook in 10-second bursts until the top is set and the center is no longer shiny.

  • Add the butter to the mug and microwave for 35 seconds to melt.
  • Add the remaining ingredients to the mug and mix well with a fork.
  • Place the mug in the microwave and cook for 50 seconds, then check it. The cake should start to pull away from the sides and the top should look set, with the center still a little soft. If the center still looks shiny, microwave in 10-second bursts until it’s just set. Don’t wait until it looks dry, or it will taste dry.
  • Let the cake cool for about 5 minutes before eating.

  • Choose the Right Mug or Ramekin: Use a mug that can hold at least 2 cups of water to prevent overflow and leave space for toppings. If you don’t have a mug, a large ramekin works just as well.
  • Mix Thoroughly: Ensure all ingredients, especially the egg, are well combined for a smooth cake texture.

    Made this tonight as a little treat for myself and it was so good. I love that it uses items in my pantry and comes together fast with basically just cleaning the mug. I followed the recipe but started checking at 50 seconds, and mine was perfect at 60. I’m at high altitude and my microwave runs hot, so I always have to keep an eye on cook times.

    I’m not sure how old your microwave is, but in the time it took me to separate my egg for the second one the first one burnt so badly I was afraid the mug was going to explode. It was only in there two minutes and 10 seconds. The second one I was making I watched like a hawk and it was done in 1 minute 20 seconds. Do not get the least bit distracted when making this. My husband did say it was okay, but a bit dry and needed two scoops of ice cream. But that could just be him.

    1. Mug cakes cook very fast, so two minutes is definitely more time than they need. They can go from fine to overdone in seconds, especially in a higher-power microwave or thicker mug. I always recommend checking early and cooking in short bursts so it stays soft. I’m glad the second one worked better, and your husband’s ice cream solution made me smile.

    This worked exactly as written, thanks! I cut the vanilla in half, next time I’ll use 3/4 tsp. It’s very good – I have a strong microwave and it needed the full time.
