    Summer fruits are the best and these buttery Peach Raspberry Crumble Bars use two sweet and colorful fruits that combine to make an easy and delicious dessert bar. To be honest I love these fruit bars for breakfast too!

You can use fresh fruit when it's in season, or you can reach into your freezer in the middle of winter and make this dessert with frozen fruit. Baking with peaches and raspberries always makes a tasty fruit pairing.

    What is a crumb bar?

    • Is it a cookie or a dessert? Well, it's kinda both and more!
    • Crumb bars are similar to a crisp but the bars have a crust and a crumble topping that can be cut into squares.
    • These bars became popular during WWII as a more economical way to make a dessert instead of a fussy pie.
    • You can also make crumb bars savory by adding meat and vegetables and replacing the sugar with cheese, so now you have an appetizer or entree.

    Tips for making fruit crumble bars

    • Whatever fruits you use, try to cut them all to be the same size so everything cooks evenly
    • Mix the fruit with cornstarch which will thicken the fruits juices during baking
    • Can you use frozen fruits - yes you can, which is great because frozen fruit is always available just don't forget the cornstarch
    • When adding the fruit mixture to the crust, don't add the juice at the bottom of the bowl, you just want the fruit.  The juice will make the crust too soggy and not so yummy!!!

    Let's bake

    Step 1. Prepare the raspberries and peaches first. Cut the peaches into small dice, about the size of the raspberries. Add the fruit to a medium-sized bowl and mix in the cornstarch and sugar until combined then set aside.

    Step 2. In a large bowl add the flour, sugar, baking powder, salt, and cinnamon then mix together.

    Step 3. Cut the cold butter into cubes and add it to the flour mixture.  With a pastry blender or two knives, cut the butter into the flour until you have coarse crumbs.

    Step 4. Beat the eggs with the almond extract and mix this into the crumb mixture until combined. It's easier to do with two forks.

    Step 5. Place ⅔ of the crumb mixture in the bottom of the baking pan and press down to form the crust.

    Step 6. Spoon the fruit over the crust. If there is juice at the bottom of the bowl don't add it. Too much juice will make the bars soggy.

    Step 7. Loosely crumble the remaining crumb mixture over the fruit to cover. If the crumble mixture is soft, you can put this in the fridge for 5-10 minutes to chill up the butter, then crumble it over the fruit.

    Step 8. Bake at 375 degrees F. for about 40 minutes until golden brown and bubbly. Remove from the oven and cool completely before cutting.

    Using frozen fruit

    I get a lot of questions about making these bars with frozen fruit and so you know I do this all the time. Many times frozen fruit will produce excess liquid causing desserts to be overly moist, wet, and soggy.

    When I made these crumb bars I made the recipe exactly as directed. I just mixed the frozen fruit with cornstarch and sugar and topped it with the crust mixture.

    The bars baked up nice and firm. Even though I was using frozen fruit, I didn't have excess juice, and the bars baked up nice and golden brown, just the same as using fresh fruit.

    Crumble bars...it's a dessert love affair

    Crumb bars  - are really one of the easiest desserts to make because the crust and the topping are made at the same time in one bowl, you don't even need any special equipment, so this dessert is a real-time saver.  Just press two-thirds of the crumble into the bottom of the pan and then sprinkle the other one-third of the crumble over the fruit. So, so easy!

    Needing a great dessert for a cookout, a celebration, or maybe just a late evening treat, this is the perfect recipe.  These bars are super quick to make with just a few pantry ingredients plus the fruits.

    Oatmeal, breadcrumbs, and nuts can be added to the crumble mixture to reduce the amount of flour

    Bob's Red Mill Measure for Measure Gluten-Free Flour can be used instead of all-purpose flour for a gluten-free dessert.

    Variations

    Fruit - For today's crumb bars we are using fresh raspberries and fresh peaches, but, the great thing about crumble bars is you can add lots of different fruit combinations. You can even add three or four different fruits. Here are some suggestions

    Raspberry Peach Crumb Bars

    This is such a sweet and easy dessert to make with either fresh or frozen fruit. The best part is the crumble mixture uses simple pantry ingredients that you mix in one bowl and the crumble is used for both the bottom crust and the topping.

    Equipment

    • large mixing bowl
    • 13 x 9 ceramic baking dish

    Ingredients
      

    • 3 cups AP flour
    • 1 cup granulated sugar
    • 1 teaspoon baking powder
    • ¼ teaspoon salt
    • ½ teaspoon cinnamon
    • 1 cup unsalted butter
    • 2 large eggs
    • 1 teaspoon almond extract
    • 1 tablespoons cornstarch
    • 2 cups raspberries 2 pints
    • 2 cups peaches, chopped 2 medium peaches

    Instructions
     

    Making the crumb bars

    • Preheat the oven to 375° F. Use a 13" x 9" baking pan
    • In a large bowl mix the cornstarch and ½ cup of sugar together. Add the raspberries and diced peaches. Mix until combined and set aside. You do not need to peel the peaches.
    • If using frozen fruit, do not thaw.
    • In a large bowl add the flour, ½ cup of sugar, baking powder, salt, and cinnamon, mix to combine
    • Cut the cold butter into small cubes and add to the flour mixture using a pastry blender or two knives until the mixture is in coarse crumbs.
    • Beat the eggs and almond extract together and then mix into the crumb mixture until combined.
    • Press ⅔ of the crumb mixture into the bottom of the baking dish.
    • Spoon the fruit mixture over the crust and spread out the fruit. Do not add any juice in the bottom of the bowl.
    • Sprinkle the remaining crumb mixture over the fruit.
    • Bake the crumb bars for about 40 minutes until bubbly and golden brown. Remove from the oven and let the bars cool then slice into bars. Store in an airtight container in the refrigerator, up to 4 days. Note: if baking with frozen fruit you may need to add an addition 5-10 minutes to bake off the excess juices.

    Notes

    If using frozen fruit, do not thaw before adding the cornstarch sugar mixture.
    Make sure do drain the liquid from the fruit mixture before adding to the crust. 
    You can be flexible with the fruits and add different variations such as:
    • Strawberries & Blueberries
    • Raspberries & Plums
    • Blackberries, Blueberries & Raspberries
    • Peaches & Plums
    • Apricots & Cherries

      Thanks for the recipe. I added pecans to your the second half of the crumb mixture to make a crunchier topping and it was very good. I reduced the sugar for the fruit to 1/4 cup as I found the fruit was so delicious and sweet that it didn't need more. My dessert had a crust that was a little soft. Do you think it's better to increase the time or to increase the temperature?

        Thanks for letting me know you made the crumble bars. Adding pecans sounds amazing and I reduce the sugar in my recipes all the time. So the soft crust I first would just bake a bit longer, sometimes an extra 5 minutes in the oven makes all the difference.

        One thing I know when baking with fruit is the juices really affect the crust, so if the peaches are super juicy those juices can seep into the crust/crumble and that can hamper the baking process.

        For now, I would just bake a little longer. Hope that help, and thanks so much for visiting my site.

      I just made these tonight, and my husband and I really enjoyed them. What a great and easy way to use some peaches that were starting to move toward eat me this minute! I think I was expecting the crust/crumble to taste just a bit sweeter; my husband is not a fan of overly sweet desserts and thought it was perfect. Will have a bar tomorrow with some whipped cream or ice cream, and will definitely make these again. Thanks for a delicious and summery dessert!

      Hi! These look so yummy! I can't wait to try them. Just a quick question.....I just want to clarify about using frozen fruit.....so I should not thaw the fruit first? Just mix it with the cornstarch mixture? Then let it rest for a while and just drain off any liquid? Or should I be letting the fruit thaw completely at some point in the process? Thanks for your help!

        Tennille, thanks for the question about the frozen fruit. I just updated the recipe for you. You do not need to thaw the fruit, but you do need to add 1 teaspoon more of cornstarch and bake 5-10 minutes longer so the juices will bake-off. Thanks so much.
