Scrambled Egg Ingredients
Ingredient notes
Eggs - I always use fresh large eggs.
Fresh egg trick ~ To see if your eggs are fresh, try this trick. Fill a tall glass with cold water and put your egg in it. If the egg sinks to the bottom of the glass and falls on its side, then it is most likely fresh. If the egg floats, then it has likely gone bad and should be thrown away
Milk - adds a little moisture to your eggs, and you can also so use half and half or cream. If you prefer a plant-based milk use a non-flavored milk. You can definitely make scrambled eggs without milk, so this is optional.
Butter - since you will be adding salt to the eggs, use unsalted butter. You can also substitute olive oil for the butter. Both butter and olive oil add a delicious rich flavor to the eggs.
Equipment needed
- You will need a bowl big enough to mix the eggs. You can use a fork or a whisk to do this.
- A rubber spatula is best for stirring the eggs while they cook since it's flexible enough to scrape the edges of the pan, and you can easily turn the egg curds over. A metal utensil will likely damage the non-stick skillet.
- An 8-inch - medium-sized non-stick skillet - The reason to use a non-stick pan is that eggs are sticky, and once they hit the pan you want to be able to move them around and turn them over with ease.
How to cook eggs
Step 1. Crack the eggs into a bowl then add the milk, salt, and pepper. Whisk the eggs until they are light and frothy.
Whisking egg tips~ It is really important to whisk the eggs by using a wire whisk or a fork. Whisking will add air pockets that help make the eggs lighter and fluffier. If you break the eggs directly into the hot frying pan they will start cooking before you can thoroughly mix the egg yolks and the egg whites together. You will end up with streaky and tough eggs.
Step 2. Melt the butter in a non-stick frying pan over medium-low heat.
The heat setting ~ Watch the heat setting on your stove, it's best to keep a medium-low temperature and let the eggs cook slowly. Any hotter, then you risk dry and tough scrambled eggs.
Step 3. Pour in the egg mixture, let the eggs sit for about 30 seconds, then using a rubber spatula scrape around the edges of the pan, lifting any cooked egg off the bottom. Allow the uncooked egg on top to flow down underneath so it will cook evenly throughout.
Step 4. Continue to stir the eggs gently while the curds form and until no liquid remains. This should take about 2 minutes.

Egg FAQ's
Two to three eggs are recommended for one serving of scrambled eggs.
1. Eggs go cold quickly, so serve them as soon as they come out of the skillet
2. Serve the eggs on a warm plate.
3. If you are making eggs for a crowd, cook the eggs and then place them in a crockpot on low heat to keep them warm.
Yes, you can freeze eggs. Cook the eggs, but leave them a bit runny and then let them cool. Place the eggs in a freezer bag and remove as much air as possible. Freeze for up to 6 months. Let thaw in the refrigerator and then reheat the eggs in a nonstick skillet.
