Step 1. Brown the ground beef with garlic, salt, and pepper over medium heat in a large skillet. Drain any excess grease and return to the stove.
Step 2. Stir in the onion and red bell pepper once the beef cooks. Cook for 3-4 minutes to soften the onion and bell peppers.
Step 3. Add the white rice, undrained Rotel, beef broth, and Worcestershire sauce to the rice skillet and stir until well combined.
Step 4. Bring everything to a boil, then reduce the heat and cover. Simmer for 20 minutes until the rice is tender.
Step 5. Remove from the heat and add the cheese. Cover the skillet and let the mixture rest for 5 minutes until the cheese melts nicely. It should be nice and gooey when it's done.

Sort of. Make sure to brown the meat first and then add your rice and liquid after you drain the excess grease. Do not add rice to raw meat.
You'll want to add your meat before the remaining ingredients.
There's a few tricks to cooking ground beef. Bring it to room temp on the counter before cooking rather than putting it in the pan straight from the fridge. Avoid moving it around too much while cooking. Instead, sear it on medium-high heat for a few minutes before breaking it up.
You don't have to, but it's recommended. Rinsing gets rid of the extra starch that causes each grain to stick together and it will result in fluffier rice.
You might need to rinse your rice! You also might be cooking your rice for too long resulting in rice absorbing too much liquid.

- 1 pound ground beef
- 1 medium yellow onion diced
- 1 medium red bell pepper diced
- 3 cloves garlic
- 1 teaspoon salt
- 1 teaspoon pepper
- 10 ounces Rotel tomatoes with chilies
- 1 cup long grained rice
- 1½ cups beef broth
- 1 tablespoon Worcestershire sauce
- 1 cup cheddar cheese shredded
- Parsley optional for garnish
Instructions
- In a large skillet, brown ground beef, garlic, salt and pepper over medium heat. Drain and return to the stove at medium heat.
- Stir in the onion and red pepper. Cook for another 3 to 4 minutes to soften the onions and peppers.
- Add the rice, undrained Rotel, beef broth, and Worcestershire Sauce to the skillet and stir until well combined.
- Bring everything to a boil, reduce heat and cover. Simmer for another 20 minutes or until the rice is tender.
- Remove from the heat and sprinkle generously with the cheese. Cover the skillet and let the mixture rest for 5 minutes or until the cheese melts and gets nice and gooey.
- Garnish with chopped parsley if desired.

I actually have some of this recipe in my freezer now. I prefer to let it defrost in the fridge before heating it so the rice doesn't break down, but I have heated it from frozen in the microwave. It's best to set the microwave on 50% power and slowly heat it.

If you can't use Rotel, I would add some type of soup, like cream of mushroom. Use 3/4 of it since it's super thick and add extra water as needed.
